Lately, been making...

soups
pumpkin, kumera, ginger and coconut milk...
Potato soup with egg pieces and parsley...

rice based meals...
Green Thai curry
Red lentil curry
Eggplant with tomato, mushroom, onion, garlic, courgettes and tofu

Pressure cooked bean based meals
Black eyed beans tossed with silverbeet, lemon, garlic and olive oil
Chick peas (gabanzo beans) with tomato, garlic, onion, herbs and what veges on hand.

Reminds me... need to put more gabanzo beans on to soak.

Pea and ham (well bacon bones) soup ...made a big pot yesterday so tonight will be it again ...right sort of weather....going to make some cheese scones to go with it :)

Not tonight, but tomorrow lunch will be Chongqing Hotpot :D the fish hadn't thawed enough by the time mum was off to feed the animals so I got some home-made Pasta bake going in between scrubbing the LPG danger labels off the new fire bucket I'm making for my sister-in-laws birthday prezzie.

It's painted now and having in the lounge where the fire keeps things nice n cozy to dry.

I'm moving in with you Leonie[;)]..
mind you I have been quite good this week..the last week has been.. osso bucco, hamburgers, roast chicken, pickled pork, lamb chops..prob pasta me thinks tonight

lunches have been soup soup and more soup..with scones.. lovely...
did a fantastic german veg and frankfurter, French onion, pumpkin and pea and ham.. is there anything better than soup?

:D :D yum..thai green or red curry is all good.. its the coconut cream that makes it soo skrummy

Steph, you should try making pumpkin soup with coconut milk in it and fresh chopped ginger and garlic, not to mention the onion and pumpkin (or added orange kumera)...

Vege curry on rice tonight.

Overdosing on broccoli and leeks from the garden at the moment, so life is all about stir-fries, and curries, and steamed veges in cheese & herb sauce with golden breadcrumbs on top... etc.

Left over vege curry goes well on vogels with cheese grilled on top for the next few lunches.

Living alone, I usually make enough to freeze away a couple of meals also for future convenience.

Barnrat, do you find that it is difficult to be bothered cooking a proper meal for one person? I did when I lived alone. I found myself eating rather a lot of chipped potatoes and fried eggs.
